If you have time for 20 minute wait-list sit down. If not order any of the V menu items togo. Oh, menu does not state vegan or not vegan you have to ask. Request to get the beet salad and remove the goat cheese. And if you want more add a veggie pattie on top.

This restaurant is located in Terminal C. I had some time between flights so I chose to do the sit down option. They also have a to-go ordering area that looks like it has limited options. From the other reviews the tofu sandwich sounds like a pretty good option for take away.

The menu has clearly marked vegan options. I chose to do the burger because of the reviews on here and I was not disappointed. The servers also ask you if you have any allergies as well as dietary restrictions.
The burger was huge and very filling. I really liked the bun and the spicy - sweet slaw on top. I got regular fries and they were also really tasty.
It is expensive. I have an airport discount because I'm a pilot, and even then my bill was almost $30 for an iced tea and meal.
Overall it's a good experience and a great place to easily find vegan options.
For cheaper places I would go to Freshins in Terminal A or Garbanzo in Terminal B. If you are in C the to go sandwiches and salads here are an option and not as pricey as the sit down food.
The servers are really friendly and they are really fast!

They must have updated their menu in the last few months. Vegan options are now clearly marked vegan and they’ve added a lot! Veggie burger, ramen, tofu scramble, 2 salads, and coconut milk oats. Plus 2 vegan desserts! I got the veggie burger with sweet potato fries and it’s really good and fresh. Great option while you’re at DIA.

A good hang during a flight delay - Edit
I grabbed dinner here during a flight delay. I sat at the bar. The servers were attentive, efficient, and knowledgeable, and asked about food allergies. The beer list was excellent. Though crowded, as airport restaurants often are, it had an artistic, relaxed vibe. (The bartender didn't mind me lingering over my porter.) I ordered the veggie burger, which was expensive ($26) and pretty average (think Dr. Praeger's), with minimalist fixings. It came with sweet potato waffle fries, which were very good. They were out of the pretzel bun, but the ciabatta bun was good and vegan. There is also a grab-and-go section with delicious smoked tofu sandwiches, which are misdescribed as banh mi.

This place sales meat but they have vegan options. They have a quick side market with quick to go vegan options like a bah mi tofu sandwich and a box of hummus. The sandwich was pretty good considering that it has been in the fridge for a while

During a lengthy layover during lunch time, we found this restaurant. My wife and I each had their Veggie Burger. It is a large sandwich served with a side of delicious, waffle-style, sweet potato fries. They also have vegan ice cream, but we were too full to think about having any.

My go to at Denver Airport - Edit
I fly into Denver regularly, and Root Down has become my go-to spot for both grabbing something pre-made to go quickly when I land and sitting down for a hot meal before I fly out. I always grab the tofu bahn mi sandwich from the separate to-go counter and eat it on the shuttle bus to the rental car lot. It generally takes less than 3 minutes to get my sandwich and go. Root Down is super fast even when they’re slam packed. You may have to wait for a table, but once you have your seat you can be in and out within 20 minutes. As long as I have 30 minutes or more before boarding anywhere in terminal C, I’m not even worried about sitting down and ordering a hot meal. They always take my order practically immediately as long as I’m ready and food is out within 8 minutes after ordering. I usually get the vegan burger with sweet potato fries (just ask to not receive /don’t use the yellow dipping sauce it comes with, everything on the burger itself and the fries are all vegan by standard). Today I got the vegan breakfast burrito, which was excellent. The scrambled tofu blended really well with everything else, it kind of tastes like it has chorizo spices in it. I’m always happy here.

So grateful that this place exists in the airport. Worth a detour to Terminal C if you have time - it’s right before gate C41. Sit down or grab-and-go from the express kiosk. Multiple options on the menu are marked as V, but note that it’s “by request” - so make sure you specify vegan.

It’s not just a basic veg burger - it was flavorful, crispy on the edges and came with a sweet jalapeño relish, some slaw and yummy sweet potato fries. Service was fast and efficient too, they had me on my way well on time with a full belly 🥰

Service was a bit iffy- some very friendly but otherwise largely ignored at the to-go counter. Very good vegan burger on pretzel bun with fries. Spicy carrot hummus meal ok, lots of hummus, crisp jicama was tasty, but the dates & olives seem oddly matched. About a 15 min wait for to- go food.

The veggie burger with sweet potato fries really hits the spot.
The menu clearly marks what can be made vegan and the staff are always knowledgeable on what the substitutions will be.
Fun fact: alcoholic beverages can be put in a to-go cup to have throughout the airport. Just can’t take it on the plane.

It's rare to find vegan food at airports but fortunately Root Down has it. There are vegan options in the sit down restaurant, but if you don't have much time there is a Tofu Banh Mi at the takeout counter that has vegan mayo thats delicious!

Title says it all. They serve it until 12, so you can even get it for an early lunch. Sub eggs for tofu scramble and soy chirizo for the reg. It’s also gigantic, so the $18 price tag doesn’t seem that out of line.

I’ve flown through Denver many times and had never come to terminal c so I previously missed this place. But let me tell you it’s worth the trip to another terminal; having tried many other places the vegan options here are much better than anything else in the airport. We had the shoyu ramen and tofu scramble, and they were both great. Many options on the menu are vegan or can be made vegan, with options clearly labeled and knowledgeable staff. Also had a deliciously foamy almond milk late. It was efficient as well which is important in the airport. I highly recommend.
