They now have a fully vegan menu - Edit
I tried this place twice, once with a friend and another time with delivery. I'm not a huge fan of sushi in the first place but I must say they do deserve a good rating. They had plenty of vegan options and they actually have a separate vegan menu, so it's super easy to directly go there and order without asking any questions.

El bowl vegano también está muy rico, pero es frío.
El entrante de hummus de remolacha con crudités también muy rico.
Es un sitio ideal para pagar con los yums de "El Tenedor" (The Fork) si eres vegano.
Es una cadena.Conozco el de centro y el de Avda. de Brasil.
Al contrario de lo que opinan otros usuarios las raciones de los platos que he recomendado son supergenerosas.
Además si en lugar de bebida pides agua del grifo te la ponen encantados.
Pros: Raciones generosas, Wok vegano muy rico , Aceptan Yums (barato / gratis)

Food is tasty but servings are definetely scarce. I went for the menu of the day at lunch on a working day. The starter was scarcier than most free tapas you can get with a beer in a lot of bars. Vegan sushi for main was tiny tiny super tiny. There are vegan mochis for dessert but they give you the chance to order another starter instead, which I went for. Eating à la carte may be more advisable since list some more vegan choices than in the menú del día. BTW, they serve foie gras in some california rolls (thumbs down for that)
