Best Vegan Enchiladas in Grand Rapids

MeXo stands out from the crowd of Mexican restaurants by focusing on pre-Hispanic cuisine. Meaning, the food of Mexico before Spaniard involvement. And that means more vegan options in a style of cuisine that is already pretty vegan friendly.

There are multiple vegan options listed on the menu, as well as vegetarian options that are customizable. Although enchiladas are typically not my favorite, I recommend google for the vegan enchiladas here. They are an experience I have never had before. Honestly, they are probably the best enchiladas I have ever had, not only the best in the city.

There is also plenty of options for appetizer dips and even a vegan dessert flan, if you are a fan of the texture. I enjoyed both the dip spread and the flan dessert, being that custard is a difficult food to find pant-based.

Outside of it’s delicious foods, MeXo draws the eye from the street with it’s gorgeous wall mural showcasing Mexican history that was painted as part of Grand Rapids Art Prize.

Overall, I am a big fan of MeXo. It is a higher dinning experience than a typical Mexican restaurant, so be aware of that in its reflection of the prices. I recommend MeXo was a dinner date out on the town with all the major event spaces downtown within easy walking distance. There is also parking for MeXo customers. Check it out!
