Stopped here based upon the reviews and ordered the scrambled tofu. Got it with spinach and avocado, hash browns and toast . Loved the hash browns. The tofu scramble was ok. Came here with 2 other people who are not vegan and they said their entrees were mediocre. I also got the lavender soda which was delicious

Indoor dining in New York State at the Joshua’s Restaurant started with—putting on a mask, something I have not had to do elsewhere in Woodstock, New York in recent days as a vaccinated person.
The Joshua’s menu (dated April 2021) is easily more than minimally vegan-friendly. Vegan items are marked “VEGAN,” and “V” is the symbol for vegetarian but not vegan. This Mediterranean restaurant’s current menu features a great vegan Tofu Scramble that is new to me since I last went to this restaurant a couple of years ago. The scramble comes with two selections of veggies, mushrooms, and tomatoes from an enticing list. I chose spinach and tomato. The tofu was billed as organic. Salad was available as a side, and I selected it, helping me avoid the doubtlessly delicious but heavy homefries. For taste and health, I choose whole-wheat toast over non-whole-grain pita bread. I decided to start off my meal with the more-Mediterranean Baba Ganoush. (Eggplant, tahini, and garlic are the key ingredients.) The restaurant now offers cucumber slices available as a premium “bread” option for the Baba Ganoush, and I pounced, completing my order.
The Tofu Scramble was a $14 entrée. The Baba Ganoush, like the two other appealing vegan appetizers, was $7, plus $2 for the fresh cucumber option.
Other vegan main dishes include Tabouleh Salad with three Dolmasi (stuffed grape leaves), and the fancy three-course Barbecued Tofu and Vegan Ravioli. The Vegan Ravioli is just delicious to my recollection. These two three-course dinners are a bit pricier at $26 dollars for either.
Vegetarians will have more options to choose from. I have not touched on the beverages or add-ons, some of which look tasty and vegan. The restaurant should consider using its “V” and “VEGAN” symbols in those sections in a future menu. For example, is the Cappuccino just a "V"? The Smoothie?
I was able to select a window table on the first floor for my very-early dinner. Other patrons trickling in favored outdoor seating on a lovely day. Joshua’s remains a wonderful vegan-friendly option in Woodstock.
One of three municipal parking lots was a helpful option for my journey from another county.

Very nice dinner atmosphere. Meals come in three courses started with pita than salad. They had a few vegan entrees which were pretty good. It was a good spot for mixed company. Check for four came out to a little over a hundred dollars with no drinks.
Although my wife and I live about 2 hours from Woodstock, we sometimes visit the town for the primary purpose of eating breakfast at Joshua's. The Scrambled Tofu is simply the best that I have ever tasted in my 30+ years of being a vegan. Other vegan and vegetarian options are available for lunch and for dinner, but I heartily recommend that you try the Scrambled Tofu. Staff is always fantastic. I have to say this one more time. Try the Scrambled Tofu for breakfast!
Joshua's is a classic eating destination after walking the streets of Woodstock! Their appetizers give you a little taste of several delicious treats. From the tabouli salad to the veggie and non-veggie entrees, your taste buds will be pleased.
