Delicious lasagna, will be back to try other dishes! - Edit
In my spring ritual of checking out this enormous farmer's market for vegan options ( has been pretty disappointing in the past) I was thrilled to run in to Eat E7ectric!, a 100% plant-based vendor selling vegan food. Had a nice little chat with the owner to hear his story - he was over 300 pounds and diabetic when he watched a documentary that led him to try plant-based eating and hasn't looked back. This is a new venture for him. I sampled the stuffed pineapple and it was delicious, but I wasn't sure how well it would keep for lunch so I opted for the lasagna (spelt noodle, ground (no) beef, zucchini, cheese sauce, and roasted tomato) instead. It was delicious, and I will be back to try his other offerings.
