Lots of things to pick from, different types of tofu, and other stuff. Mushrooms, vegetables.

The allergens are all labelled, but I don't know about gelatin.
Making your own sauce is fun because of all the things you can add in your own amounts.
In the shared pots it's a water tight divider so if you're sharing with non veg people it doesn't mix.
Looking for the left overs getting soggy in the bubbling depths is also a fun carnival game at the end you get for free.
If you're stupid like me, remember the stuff is hot right after you take it out the pot

we booked in advance and added to the dietary requirements notes that we were vegan, when we arrived there was a sign on our table stating this so the staff were aware. i would recommend telling the staff that you're vegan. our server was very helpful and outlined everything that was vegan for us, and everyone there was lovely :)

broths are very tasty and the spicy broth came with the chilli paste on the side so you can control the spice level. loveeee creating my own dipping sauce too - vegan options were sesame oil, sesame paste, soy sauce, black vinegar, garlic, chilli, coriander, spring onion, sugar and salt. very customisable and you can go back to make different sauces throughout the meal.
for the dishes, most had the option to get a bigger plate or an individual skewer. loved this as you could get lots of your favourites and try new things without having to commit to too much. lots of really interesting dishes to try e.g. winter melon, baiyu mushrooms, konjac noodles, pickled mustard root. loved the flat sweet potato vermicelli - suuuuper chewy noodles that are a challenge to get out of the pot!!
i love hotpot as it's a really social meal and so fun to try everything. would recommend going as a group.
there are three locations across amsterdam, we visited twice at different locations and both were great!!
