Few vegan options - Edit
Despite the seemingly abundant vegan variaties of noodles you can build with their menu, the staff have said that ALL noodles contain egg, plus there are only a couple of sauces that contain no fish or oyster sauce...

A good place when in a hurry - Edit
I had a veggie rice option with tofu and stir-fried vegetables. You can curate your own mix but I would be careful because items are not labelled vegan, and you can't just assume. It was delicious and the right amount.

Make your own customized noodle and vegetable stir fry. They also have “soya voya” which are basically soy curls that soak up the sauce that you choose.
