Confirmed not vegan - Edit
Thanks to the person before me for posting about this -- it is confirmed that they boil all the noodles in the same machine which means there is cross contamination with the fish water that the other noodles are born in. They say that the water is constantly flushed out but who knows how exactly that operates. So we had to leave.

I can’t say how the food is as i had to leave without eating. And this was after almost an hour of waiting for a table. They use the same water for the vegan noodles as the non vegan. Ramen noodles have fish powder in them so the vegan noodles are cooked and soaked in fish water. I guess for some people this wouldn’t be a big deal, but I am highly allergic to fish, so for me, it was a dealbreaker. As well, you can’t really say something is vegan if it’s soaked in water where there is fish powder.
Read moreI have no idea why a Michelin restaurant can’t boil a pot of water and cook these noodles separately, but they said that they can’t. So we had to leave without trying any food. I will say that the service was great, and our server was excellent. But this is a huge oversight for a restaurant of this caliber. Big disappointment.

Arguably BEST Ramen Ive ever had - Edit
Had the Ginger Miso Ramen, mushroom kimchi and cucumber starter. So flavorful. Its a must try for Ramen lovers in Nyc. I dont think they deliver but the dining experience and atmosphere was sensational

Miso Ginger Vegan Ramen - Edit
Delicious, creamy, and loaded ramen. As a party of 5 walk in/no reservation we had to wait a little over an hour for our table. It was well worth the wait. My family enjoyed the Classic Tonkutsu and my son and I loved loved the vegan ramen. The only thing I found weird was that there was no vegan protein included although the menu stated soy protein (assumed tofu) but that may have been a misunderstanding on my part. Anyways, the ramen was heaven and I’ve tried out so many ramen places (not in NYC) and this one definitely stands out in its own unique way. This is definitely on my top 5 ramen spots I’ve been to.

They don't have many vegan options but the vegan Ginger Ramen is just delicious.

In general it's a beautiful place and the staff is very courteous. But it's very popular so you might have to wait or make a reservation.

Maybe I'm a ramen snob? I've tried a lot of ramen places. The setting was elevated, the appetizer was quite good, but the ramen was forgettable. It did use fresh ingredients, but just didn't have that "umpf" factor in terms of flavor. There's only one vegan ramen option here. If you're looking for a larger variety of vegan ramen, with much more memorable flavor, I highly suggest checking out Ramen Ishida in downtown.

This place is just so awesome! I recommend sitting at the bar. The bartenders are so experienced and making a cocktail is like performance art. They put a lot of time and love into the drinks. The food is amazing too!! The hot edamame is honestly amazing. Ramen is the best vegan ramen over ever had, but the edamame is on a whole new level. MUST TRY!!! 😍
