100% vegetarian- many vegan options! - Edit
Great vegan options, but not sure how they can get five stars, as they are NOT 100% vegan. That said, very happy that we found this eatery through Happycow. It is not located on a main street, although it is in the proximity of the main Aspen shopping area.
Read moreLooks like a lot of locals support it. A lot of walk-in business on a Thursday during “down season.” Many vegan options and they are all clearly marked.
We got the rueben and tuna melt. Both were delicious. Just enough food for two. Can sit inside or outside.
Only recommendation is that I would have more than one person behind the counter during busy hours and they should have a larger counter to put dirty dishes.

Pretty good spot for sure, especially in a resort town. Didn’t think the prices were the best, almost $20 for a very small sandwich and chips (which they were out of, and subbed with a bland little Caesar salad)
Read moreMatcha latte was watered down, and it looks like every drink they make only has a few sips worth in a cup overflowing with ice. Tempeh Reuben was decent, but I’d classify it as more of a burger with how thick the tempeh slabs were. Probably on me for being less familiar with tempeh, but Reubens usually have finely sliced proteins in ‘em holding down the sauerkraut and fixings.
Overall, nice to have a meat-free spot in Aspen!

Genuinely delicious vegan food options. Would be good anywhere, but it’s especially appreciated in a town like Aspen where good tasting, reasonably priced vegan options are hard to come by. The tempeh Reuben and superhero burrito with the homemade tofu sour cream were filling and so good.

I ate at Spring Cafe twice while visiting Aspen. I had the Rueben sandwich for lunch, which was very flavorful and filling although very oily! I also got a chocolate chip cookie but it was kind of dry and crunchy. For breakfast the next day I had Blanca’s Sandwich which was very tasty, the tofu scramble on it was the best I’ve ever had! I got the dirty chai latte which was decent but not amazing. I highly recommend the tofu scramble here. A little pricey but great to find vegan food while on vacation.

Very slow, inattentive service. Matcha latte had an up charge for oat milk and was super watered down. Ordered the tempeh Ruben with sauce on the side, they forgot the sauce, and it was quite flavorless until I remembered to ask for the sauce. Chips on the side were not worth the calories.

Mocha w/oat milk and pumpkin cinnamon latte w/oat milk were both very good. Nachos were delicious, though cilantro would have been a good flavor addition. Spinach and mushroom enchiladas had excellent flavors, needed more sauce though. Sweet potato white bean burger was fantastic! The soup of the day, Moroccan lentil was good. The spinach artichoke dip had a weird flavor, we didn’t like much. The peanut butter banana oatmeal cookie and the coconut macaroon were both delicious.

Had the Spinach Mushroom Enchiladas with the Matcha Balls while visiting Aspen in August. The food was pretty decent and their Acai smoothie is to die for. Unfortunately, the service wasn’t that great even if we were the only one in the restaurant.

We're on a road trip from East Coast towards the west, and after driving through Missouri and Kansas, what a delight to find a lunch spot that had vegetables on the menu. It was almost too much -- so many choices. The food is simple and healthy.

I was really happy to discover this place while walking around aspen. Staff are very friendly and helpful and doing their best during the pandemic. Really nice, open, bright dining area with great artwork.

My Favorite Breakfast Spot in Aspen! - Edit
A good variety of delicious vegan breakfast options. I always have the breakfast burrito which is a tofu scram with veggies and vegan sour cream, I use their Gluten Free tortilla. I've tried their pancakes, some juices, and some smoothies, all were excellent. They also have egg options (which my husband prefers, for us, it's great to find a place that offers both). The service is always good and the restaurant is conveniently located in Aspen town center, walking distance from Aspen Mountain.

We followed the recommendation of other Happy Cower’s and had the tempeh Ruben. We are glad we did. Excellent! We also had breakfast here and the vegan super burrito was phenomenal. It is definitely more than enough for two people.

Awesome tempeh rueben sandwich! Love this place. Been several times in winter and summer. Vegan Caesar salad was good too. Also have lots of healthy options and coffees and teas. Best place for breakfast, lunch, or a quick healthy apres ski. Pricey but that's all of Aspen.

Most dishes can be veganized without losing flavor and texture. For example huevos rancheros and the super burrito. The vegan chocolate cheese is smooth and creamy.

So many fantastic options! Falafel wrap was good (a little bland), pasta sauce also little bland but quinoa stir fry howl with tofu was fantastic! Tempeh avocado Reuben excellent. Vegan baked goods.

This place was okay, I’m wondering if I just ordered the wrong items. I ordered the lemongrass tofu dish, which was good but wasn’t too flavorful and the portion was pretty small. The thing I was most disappointed about was the Caesar salad, which cost me $21 for a regular sized portion and came with all sorts of roasted vegetables, no parm, no croutons, and the dressing was sweet- this was not a Caesar salad.

Excellent vegan options! I got the Go Green protein plate with scrambled tofu, kale and broccoli with a side of GF vegan toast and roasted sweet potatoes! We also got a side of tempeh bacon and it was out of this world!! Was a little bummed that the pancakes weren't vegan, seeing how easy it is to make vegan pancakes. All they would need to do is sub in a flax egg, puréed sweet potato or pumpkin! Just some thoughts ☺️

I haven't been to Aspen for 2 yrs, and I'm so pleased that this town FINALLY has a restaurant w/ so many fresh, healthy organic vegan options clearly labeled on the menu! Also a lot of gluten-free options clearly labeled. The staff said it's been open for about 2 years. They were all very kind, warm & friendly. I also thought it was a little on the expensive side, but it is Aspen. Casual, modern, fresh & clean atmosphere w/ very bright natural lighting. Indoor or outdoor seating options. I liked that you order & pay at the counter, then they bring the food to your table when it's ready. Kept the experience low key vs pretentious as so many Aspen restaurants can sometimes be.
