Pas de menu vegan - Edit
Comme indiqué dans les commentaires précédents, j'ai anticipé ma réservation et demandé s'il était possible d'avoir 1 menu vegan et 1 menu végétarien (dans 2 mois !) et la réponse a été NON. Le soir ils proposent un menu unique en fonction des arrivages du marché, donc cela est compréhensible qu'ils ne puissent pas être souples ; donc... attention, ce n'est pas forcément une adresse à retenir !

Great vegan menu on request with 4 courses - Edit
Pretty hard to find a spot that really wants to prepare a serious (!) vegan menu for you. Starter was quinoa, and chickpea salad with beetroot, followed by fregola with broad beans. Main was a eggplant steak icon beetroot purée with seeds and tomatoes. Desert fresh herb sorbet with ananas cannelloni.
