Great food - portions seems big enough to us! Great gnocchi & chocolate mousse! - Edit
Everything we ordered was really delicious. The gnocchi was really good and so many veggies incorporated into the dish! Complementary bread, large spring rolls and a salad before dinner were very filling! We thought the portions were great - so really the concerns posted led us to over-order. We took a mousse to go and it was served with blueberries and toasted almonds and was delicious! This is a great find in Aspen.

Not quite perfect - Edit
Bistro atop a bookstore. That in itself makes it interesting, and I think it would be beautiful to visit in the summer and sit outside on the rooftop.
Read moreThe place was cool, and service was nice, but the food was... interesting. Some of the dishes were just a bit off. Still tasty, but not a home run. I like that they have a lot of vegan dishes, so I'd likely give them another try next time we're in Aspen.
Dishes tried:
- Kale Crunchies with cashew crust. There was a lot of crust. And then, apple butter on top. Aesthetically not the best choice. Also, I like the idea of a sauce, but apple butter is too thick and didn't complement how dry and crunchy the kale was. Maybe it could be fixed by adding more kale, or instead a peanut sauce would have worked better
- Thai Butternut Squash Soup (pumpkin seeds, pom syrup). This was a little spicy and actually really nice.
- Mango Spring Rolls (carrots, mango, avocado, mint, cucumber, lettuce, curried peanut sauce). I was hoping for the mango to add more flavor, but the flavor didn't really come through as I was hoping. These were similar to most spring rolls, meaning that I liked them but they weren't too special
- Lemongrass Tofu (forbidden rice, napa cabbage, broccoli, roasted peppers, cremini mushrooms, squash, cilantro, tamari & carrot ginger sauce). The vegetables were good, the mushroom added a lot of flavor, but the tofu/rice were too dry for my taste
- Complimentary bread and pesto. This and the soup were both great.

Loved the meal. The lemon herb tofu dish was top quality. Worked with me to make it exactly how I wanted it. Kindest service staff. Tea was also very nice. Vegan options clearly labeled and staff is aware of Vegansm.

An Aspen Vegan Must. - Edit
Food is delicious and beautifully presented. Lovely staff and great outdoor space. We had the vegan bread with kale pesto, spring rolls, sweet potato gnocchi (remove goat cheese) and curry. I highly recommend!

One of my new favorite restaurants. Such a nice environment and a super cute upper deck. Service was spectacular. The menu was fairly limited in general but had multiple labeled vegan options. My biggest complaint would be that the portions are small for the price. The food was incredible. Unique combinations and flavorful in every bite. Absolutely would return again.

Wonderful experience for all the senses! - Edit
Visiting Aspen for a book talk, I found it so uplifting to spend an afternoon at Pyramid Bistro and Explore Booksellers, which are co-located in a homey Victorian building. Well over half the menu items are vegan, and all of them sound delicious and creative. Today I chose the Phat Thai Rice Noodles with roasted peanuts, shiitake mushrooms, broccoli, eggplant, roasted red peppers, mint, and tamarind sauce, and it was really delicious. I finished my meal with a chai soy latte that was also really yummy. The restaurant atmosphere is charming, with nice views of the surrounding mountains. Browsing through the bookstore after lunch was a real treat, as well -- one so rarely finds bookstores like it anymore! I agree with another reviewer that the restaurant was somewhat expensive, though I kind of expected that in a ski resort town like Aspen.

SO delicious. Thai lime sweet corn soup was fantastic. My non vegan son even loved it. Curry bowl and hubbies tofu dish both great. They serve homemade ww bread with vegan pesto—whahoo!

Chef Martin is a food wizard. It is not by mistake that Aspen Valley Hospital treated their wellness committee to a special lunch here. If you are looking for healthy food, beautiful atmosphere and friendly and attentive service this is the place! Even the omnivores were raving.

My favorite place to eat in Aspen - Edit
Chef Martin is a culinary genius who cooks the tastiest and healthiest whole food, plant based meals I have ever eaten. The atmosphere of the restaurant is relaxing and feels like an exhale after an exhausting day. It is always pure joy to eat at Pyramid Bistro.

This place is great and has enough variety for vegans you can eat here mutliple times and never order the same thing twice. The menu clearly labels all the vegan options with a V, and there are LOTS to choose from: vegan salads, vegan soup, hot vegan entrees and multiple vegan desserts.
Read morethe service is attentive, the compimentary hot-from-the-oven bread and pesto dipping sauce is delicious (and they'll bring you as much as you want.) It's above a wonderful bookstore too. Patio has mountain views. Love it!

Great Vegan Cuisine! - Edit
Went to Aspen for 1 week with Dr. Fuhrman's Nutritional Research Foundation. We had dinner every night at the Pyramid Bistro and the food was awesome! Chef Martin really knows how to blend spices and flavors to make whole foods taste great. I would highly recommend this recommend this restaurant for all vegan and non vegans!

This restaurant is located at the back of a bookstore and seemed very much like a high end place. It's a good choice if you don't mind spending a lot of money for your meal and want the restaurant experience. My husband and I just wanted to have a meal at a vegan friendly place after snowboarding for a few hours. For us it was a 3 star experience because the portions were small, food was expensive and there were no appetizing options for a meat eater. The Lemongrass Tofu that I ordered was very delicious, but again, not worth the $15 for that small portion. Staff was friendly and professional. My water got refilled at least 5 times. I'm very thankful for the waiter being so attentive since I was very thirsty after snowboarding. :D

I was in aspen for 4 days and ate at Pyramid Bistro 3 times if that tells you anything. I am a oil free vegan and this place had perfect options. Great menu and great wines. Even my non veg friends ate the vegan dishes and were all very impressed. I think they finally understood you don't have to sacrifice flavor for health.

Great for vegans and for gluten-free diners! - Edit
We celebrated our 28th anniversary at Pyramid Bistro and the food was incredible. The staff were wonderful and attentive, and the restaurant was just beautiful. Everything we ordered was both gluten-free and vegan, so we could share, and it was all delicious. We started with the vegetable spring rolls and potstickers served with drinks including agave lemonade and a coconut lime electrolyte drink. For our main courses we had the crispy flaxseed gnocchi and truffled mushroom gallette, both on a bed of organic vegetables. I had to try their desserts after this, so got the chocolate tart and creme brulée, again both vegan and gluten-free. It was a heavenly meal, and even the customers seemed friendlier than in other restaurants. Afterwards we wandered through the bookstore that is part of the same old house, then took a stroll through the town of Aspen. Thank you Pyramid for a heavenly meal and a wonderful anniversary! I hope I can go back to Aspen just to dine there again. Only reason for 4 instead of 5 cow rating is that I can't score higher for non-vegetarian restaurant.

New Chef, Great Food Now - Edit
With a new Austrian Chef, Martin Oswald, Pyramid Bistro rivals Millennium in San Francisco for the best vegan in the US in my opinion. Pyramid is now organic with fish and vegan alternatives...even oil free on request.
