Best Vegan Ramen in Grand Rapids - Edit
Who doesn't love a nice warm bowl of soup during a cold day in the Midwest? Noodlepig sure does and excels in being able to provide. Let's get this out of the way, Noodlepig is good. Like really good. They make all their noodles in-house, and you can tell by the springy mouthfeel, and their test kitchen display as soon as you walk in. The cashier was friendly and helpful in answering my dietary questions. You can tell the staff care about the quality of their work and that customers are satisfied.
Read moreI ordered a spicy vegan thai coconut curry, and I am honestly slightly scared to try something else because I do not know if any other option can compare to just how good this is. After I had my first bowl, I immediately wanted another. The flavor of the soup was a perfect combination of savory, spicy, and salty. I added the tofu, which has a pleasantly surprising marinated acidic taste that went exceptionally well with the vegetable stock.
A chef was going table to table asking how everyone was enjoying their meal and if they could assist in any way. I am not sure if this was the owner of the restaurant, but his ability to work the kitchen and front of house speaks well to the leadership at Noodlepig.
As far as atmosphere, it is an interesting combination of Americana and Japanese. The walls are spray painted with bubble art graffiti fit for an inner city American trainyard. While the TV plays a walking tour of downtown Tokyo and a vending machine-like fluorescent cooler offers Japanese drinks, reminiscent of the famous Japanese vending machines. The decor is hip and lively, yet utilitarian.
This is my new go-to ramen stop in Grand Rapids

Not yum and expensive - Edit
I tried two vegan ramens - the miso and the Mexican style one. The miso broth had very little flavor, and once you made vegan the second one there was not much in it. You have to pay 3 dollars extra for the tofu (on top of a 14 dollar bowl) and they give you one tiny peace of tofu. Staff is nice and many bowls can be made vegan, but I will not be back.

Finally! Good vegan ramen in Grand Rapids - Edit
Super flavorful ramen! I had a bowl of ramen and a boba. My ramen was a custom ramen bowl with traditional noodles, veggie broth, Thai curry tare, with marinated firm tofu, some veg toppings and black garlic oil. The broth was absolutely delicious, the tofu was packed with savory flavor, good chewy noodles, and the toppings really brought it all together. I also really like that they let you choose a sweetness level for the boba, so I had a delicious coconut boba that was smooth and creamy and not overly sweet. Noodle soups are my absolute favorite food, and I've been struggling to find good vegan ramen in Grand Rapids since I moved here. Noodlepig might be my new hero.
