Delicious noodles made with care - Edit
Inside the Hsinchu County Government building, look for Ming Ren in the basement food court (floor B1). The day I went there was a hearty noodle soup on offer. We arrived just before closing but the proprietor graciously served us anyway, warning us that it would take ~10-15 minutes as the dish is made to order. The menu for the day was handwritten in traditional Chinese only on a small chalkboard, which Google Translate couldn’t handle, but the staff was happy to help describe what was available to us foreigners. The noodles themselves were especially flavorful. The proprietor proudly told us (via Google Translate) that the noodles were based on a traditional recipe that normally uses egg but that these were completely vegan.
