Little Choice - Edit
Only good choice was the bagel with hummus and vegetables. No vegan croissant, unfortunately. Was able to get a delicious cappuccino with oat milk (they also had soya) though!

Grab something quick before you board - Edit
I noticed two locations of Juice Bar within the Termini station: one Kiosk close to the intercity trains, and another (a slightly larger kiosk) in front of the metro. The limited vegan items I noticed include juices, coffee with soy milk, a vegan bagel sandwich, and a macedonia fruit salad. Expediency seems to take precedence over elegance or tastiness here, which perhaps is not inappropriate for those in a rush to catch a train.

Decent croissant - Edit
Few options in the area. This spot is located in the terminal center near the main exit towards Via G. Giolitti street. They have fresh orange juice and a clearly labeled croissant. Other veggie sandwiches that may be vegan and other packaged snacks as well.

Good for grabbing food for the train - Edit
In addition to the vegetarian bagel and fresh fruit cups etc, they also have a lot of veggie crisps, bars, and other pre packaged to go items you can grab for a snack on the train.
