Found this business in a different location - Edit
I was surprised to come across this stall in Guanajuato Capital, since I had previously searched HappyCow for the city and had not seen it. So I happily tried a vegan samosa and took some photos so I could add the business to this website. But when I tried to do that, I discovered GuanaVeg has already been uploaded - but to a different city in the same state. It's a stall, and it makes sense that it might move around, so I did not update the listing to reflect the "new" location. I did, however, send a message to the owner opn Instagram (@GuanaVeg), inviting him to claim this page and correct any possible wrong information (including, possibly the location). It seems, from the Instagram account, that the items for sale change every week, but that there is always at least one vegan option. When I visited Sunday, I believe the top row was vegetarian and the bottom row was vegan (see photos), but I definitely recommend asking the very friendly vendor.

Revised to note: I am planning to update the location because I noticed that the previous review, posted by the user who I assume added this business, references "Manuel Doblano street market" and simply seems to have accidentally placed it on a different street of the same name. The location where I found it is also a Manuel Doblado street, just in a different city, and I have to imagine this is not a coincidence.

Fun food stall - Edit
It's a stall on the Manuel Doblano street market. I tried the brownie (45 pesos), tamales (50 pesos), and burger (150 pesos - made vegan by skipping the cheese). Everything was great but the brownie was my favourite! The owner is super nice and speaks English and Spanish.
