Vegan by omitting ingredients - Edit
Lots of items are labeled on the menu as “can be made vegan,” but that just means that they will leave off key ingredients like yogurt sauce and paneer and charge the same (very high) amount. They don’t have any dishes that are default vegan and don’t have any substitutes. That being said, the ambiance and decor is really great and the food was indeed quite tasty.

Avoid! - Edit
Diet: Vegan (if you're vegan, avoid this place)
Read more1. Wild Mushroom 1 pot (2/5). Too dry and not that flavorful.
2. Sesame chaat (a popular starter) without yogurt (2/5). Felt like chips with tamarind and green chutney on top. Didn't like it at all. Prefer the $5 chaat at my local Indian restaurants.
Note: ensure you ask for no yogurt. As I was sharing, I got half without yogurt which I consumed.
Too expensive for not enough & not good vegan options. For a non vegan it's great, but as a vegan I'll avoid going there again.

Elevated fine-dining experience - Edit
Oh, Ettan. Months later and I’m still dreaming about you. …Guys, this is not your typical same ol’-same ol’ Indian food. Ettan is owned by two-Michelin star Chef Srijith, who calls it ‘Cal-Indian’ cuisine: a fusion of traditional South Indian coastal (Kerala) cuisine and California-fresh ingredients. The space is stylish and modern; the ambience casual-chic by day and sexy at night.✨And MAN, the food is SUBLIME. Being South Indian, I was reminded of the traditional foods of my childhood, but here they are elevated by unexpected ingredients and impeccable plating.
Read moreThe menu is meat- and seafood-heavy, but it clearly marks the veg options that can be made vegan. The waitstaff is friendly, attentive and are knowledgeable about the vegan options. The small plates are where it’s at!! DO NOT MISS the Sesame Leaf Chaat. Also incredible (and vegan): the black pepper cauliflower, edamame vada and the wild mushroom one-pot. Cocktails are creative and delicious - try the ‘Sarakku’ or the ‘Lush Life’! The only shortcoming on the menu for me was lack of vegan dessert options (only a sorbet selection).
And the DECOR!! It’s so gorgeous I could die!! Loved the beautifully curated art, tiles, lighting, lush plants and the indoor-outdoor seating. Very Cali-cool vibe.
The beauty lies in the details, my friends! Ettan gets five stars from me for elevated fine dining.
