Traditional Thai Vegan Sweet - Edit
These are a traditional Thai snack literally sold in every market and various street stalls on every corner of Thailand. This is the first time I have ever seen them advertised as a vegan pancake but actually every version of them is naturally vegan by default. If you have found this stall you know what they are and you can now find them everywhere in Thailand. They are called 'kanom krok' and are made with coconut and rice flour.

Coconut pancakes are my new favorite food! Just make sure to get them fresh of the grill (not ones that have been sitting around for awhile). But also be careful if they're hot. But sooooo yummy!
