I have always loved Chuy's. I get the veggie enchiladas without cheese. Their beans and rice are already vegan. You can also get veggie fajitas. Their drinks are really good too, especially their mocktails. I suggest the Faux-Loma.

Chuy’s!!!! - Edit
Chuy’s has been a staple dine-out place for me for years, way before I even went vegan. So when I made the switch, I was so glad they also catered to vegans. I have either guacamole tacos or the veggie enchiladas. Just make sure you request no dairy. The rice and beans are also vegan, which is cool because they usually are not at other Mexican restaurants. Also got to love the margaritas😉
