Serves meat, vegan options available. Mexican fast food chain founded 1993 in the US and now operates outlets across North America and several more overseas. Set up is assembly line style where you could customize your order of tacos, burrito, or burrito bowl, and request no cheese or sour cream. Offers a savory sofritas filling that's made from soy protein, and some locations offer Impossible meat. Rice, beans, guacamole are vegan. In early-2019 added a pre-configured vegan bowl which includes the sofritas in addition to other fillings like guacamole. Open Mon-Sun 11:00am-10:00pm. Open daily.

you know you have someone listing way way too many places in Boulder, 3 v/veg places and 75 vf, when you have someone posting a McDonalds owned Chipotle. Y'all are off the rails and you can't trust you for the weather if you list every spot you've ever been and you dilute the pool making this resource ineffective.

-Burrito
The classic with rice, beans, sofritas, pico, corn, lettuce and, guac, duh.
-Bowl
While the tasty assemblage described above can certainly be enjoyed outright, I will sometimes use it as a topper for (up to 2) taco salad(s). Try it over the greens in the fridge with a smattering of dressing and a crumble of tortilla chips on top. Mmm mmm.
The staff of this fast place can be a little trigger-happy on the cheese and sour cream about halfway down the assembly line - likely and understandably due to the muscle memory of repeating that oft-ordered combo ad nauseam. It’s rare, but someone might just accidentally blurt some dairy onto your impending supper pile, in which case you can kindly throw a flag for a false start.
Otherwise and overall, I think the frontline workers here deserve general commendations for badassery for all that they handle on a daily basis.

Their sofritas are delicious! Chipotle is found almost everywhere and they are vegan friendly. The gauc and fajita veggies also amazing, Chipotle is my favorite chain and is my go to on when I want something cheap, filling and delicious.

Sofritas are the best. - Edit
Chipotle has my respect for having a tofu-based meat alternative that tastes fantastic. You get to choose from a bunch of vegetables to add to your meal and the food is ready immediately. The prices are great for the amount of food too (it's a lot of food!). I would just recommend staying away from the burrito if you like a cleanly meal. They tend to be made messily and will drip or fall apart.

The title says it all. This is the place to go for burritos. The shredded tofu known as sofritas is super delicious. I don't ever mind not having a cheese substitute, so I'm always happy with a big, veggie-stuffed burrito!

Chipotle is a good option for a quick, casual lunch (especially if you're eating with Omni friends).
Read moreYou can get burritos and tacos and bowls made with black beans, rice, guac, lettuce and tomato and different salsas for a vegan option. They also carry "Sofritas" here which is a plant-based protein made out of shredded, firm organic tofu which has the texture of scrambled hamburger. -It's cooked in sofrita spice (which is a fairly spicy/smoky spice mix popular in Latin cooking) and you can get this on tacos, burritos, etc.
The taste is a little to spicy and salty for me but a lot of my friends really love it.

It's easy for a vegan to eat here - either the veg burrito (minus cheese) or a burrito bowl (minus cheese). If you like slightly oily roasted peppers/onions you can 'fajita' the bowl or burrito.
Read moreThere are 2 good recent changes - the pinto beans are now vegan (in this store, varies nationwide) and you can get brown rice. They also have a spicy tofu that can liven things up but is a bit too over-flavored for me. If you need a dash-in, dash out this restaurant is your best option.
Pros: quick, tasty, pinto beans now vegan/brown rice available
Cons: menu doesn't change much, hard to park at this location
