Burrito time - Edit
Came to this place by accident as it was raining heavily on the streets. Was well suprised that they had a menu which clearly stated vegan dishes. I went for the Burrito and Zucchini Tostada. The Burrito was really good. It came with a fresh green salad including apple sloces and vinaigrette. Very tasty. The Tostada was alright but might have been better if I went for the Chili one.

Plenty of Vegan Options! - Edit
This place has several vegan and non-vegan options! My dad and I went here twice for dinner and were able to try something different every night without being disappointed. Highly recommend the vegan zucchini tacos!

Good choice veg in Oaxaca - Edit
$40 for the two of us: both had salads; 2 tacos each, one glass of wine; bottled water and a dessert. Food was tasty, fresh. Decor simple and nice as was the service

Incorrect order and rude service - Edit
Ordered an explicitly marked vegan option (menus are now marked with vegetarian and vegan symbols) and it came out with dairy cheese on it. I confirmed with the waiter that it was cheese before telling him that I’m vegan and don’t eat cheese. He sighed audibly before taking the dish away. It seemed odd to us that the menu was clearly labelled with vegan-friendly options, yet the server was not apologetic or understanding at all. The kitchen ended up being out of the dish I originally ordered after that, so I got the mushroom tostaditas instead. They were tasty, but there are no vegan proteins on the menu, so the dish wasn’t very filling. I agree with others that there are not many vegan options here. Overall, I would not recommend it.

Filling, large portions, local dishes - Edit
I went for dinner and was impressed by the number of vegan options. The menu is long, and pretty much everything on the menu is a local dish. I had a green corn soup, two tacos, and a mug of chocolate. My food came quickly and was very satisfying.

Lots of good options - Edit
I’ve been here several times, I’m a big fan of the salsa in particular. They don’t speak English, but they understand “Puedes hacerlo vegano?”

Pretty hard to figure out what is vegan unless you speak good Spanish. Nothing marked. At the time of ordering there was mushroom stew tacos that were vegan.

Really tasty, few options - Edit
Really enjoyed what I got at this restaurant (tried the pozole and vegan burrito). It would be nice if there were more vegan options (everyone ask). Omni family I was with loved what they got as well.

Ask them to label vegan options on the menu, read all below reviews before going - Edit
I was curious about the posole, which I never had, since I’ve been a vegetarian then vegan for so long. It was quite tasty (got the verde), and worth going. Since I had read the reviews below, I asked for a huitlacoche taco, even though it was not on the current menu, and they made me one. It was ok, improved by the avocado I had left from the posole. Omni husband ordered two different meat tacos, said one was ok, the other equaled the best he’s had. Be sure to read the reviews below so you know what people have ordered there in the past, so you can order off-menu options. Our server claimed that no one there that night spoke any English, so be prepared to explain yourself in Spanish. Ask them to mark vegan items clearly on the menu. Perhaps repeated efforts on our parts will help make this place more vegan-friendly.

Delicious, few options for vegans. - Edit
Me and my wife eat at Cabuche quite often. We love their vegetarian pozole and the "curado de avena" (great for your belly). Not so many vegetarian options, but one can only eat so much, so we are happy with what there is. Vegan/vegetarian tacos and tostadas with calabacitas and mole, quelites, mushrooms, are delicious. Vegan may find it more difficult, but if you ask the staff they will surley figure something out. Many salads and huaraches are also on the menu for vegetarians.

Good pozole but quite expansive - Edit
Went there on August 2019, and as stated in other comments there wasn't any clearly labelled vegan options. Sure you could ask them, but that's the same with almost any restaurant (as long as you speak Spanish and can explain what you (don't) eat). We ended up having the mushrooms pozole (we ask for the broth and they told us it was fine), which was good (I really enjoyed the pozole). But 75$ for a small pozole and an extra 40$ for a few slices of avocado seems a bit too pricey for me, considering the many other restaurants that can accomodate for vegans.

Good, but not many vegan options - Edit
I haf a delicious vegan burrito, but it was not on the menu. They had to create a vegan dish, since they didn’t have any. My friends had way bigger meals, but mine was still the most expensive even though it only contained vegetables.

Amazing tasting dishes but few options - Edit
Cabuche is a large restaurant with a nice outdoor seating area in the back. They serve alot of different dishes and I have tried three of their offerings. The Black Mole (Enmolada), Vegiterian Tlayuda and the Vegan Pozole. I must admit that the Black Mole (with sweet plantains) is one of the riches and most complex plates I've ever tasted. I don't know what are all the things that go into the black Mole sauce but it is oozing in flavor from left to right. The Vegan Pozole was a treat as well. A good dish if you're looking for a warm soup that comes with avacado rice and Salad. Both of these plates are worth checking out at Cabuche.
Read moreThe Veggiterian Tlayuda on the other hand I think cannot recomend. It's 90% cheese, more cheese than I have found in quesadillas and it was just beyond overwhelming.
I like Cabuche and I think the Black Mole is an absolute must if you're in Oaxaca but I'm disappointed by the lack of options.
Pros: The Mole Negro is in a class of its own, The Pozole can be made Vegan , Nice outdoor seating area
Cons: Few Vegan and Veggiterian options

Mexican restaurant - Edit
When you go to Cabuche, you may probably ask yourself why this place is listed on Happy Cow. The menu covers all the typical Mexican dishes, which are not vegan. But staff is really helpful here and they will work it out with you what you would like to eat and how they could do this. You probably end up with food they could prepare for you in any other Mexican restaurant, too, but in some places they just don’t get it and so it can be quite difficult to get a really vegan meal.

OK for vegans - Edit
On first seeing the menu, it did not look promising for a vegan. But the waiter said they could make items without cheese. I ordered a huarache, but it came with cheese. They redid it without. It ended up fine.

Great pozole - Edit
There is not much variety to choose from: the pozole which is great, a salad and a flat bread with mushrooms (ask for it without cheese). The food is delicious, however, and the girl who served us was lovely. Recommended for the incredible pozole.

the best food i've eaten in oaxaca. The sopa la chiapaneca is stunning. the tacos de raja con queso were great - we are a mixed family of vege and non vege parents and kids and we all left very satisfied. the service was friendly and fast - the art of the walls is beautiful and the space is very calm.
