Vegan-friendly Vietnamese Street Food Option!

I get their tofu-mushroom pad thai regularly. It is so good and could easily be split by 2 people or across 2 meals. The tofu-mushroom banh mi with no mayo is a lighter alternative and always fresh and delicious too. They use these big, hearty mushrooms (Hamakua Ali‘i mushroom maybe?) and everything just works super well together.

Also, I asked to confirm that the tofu-mushroom pad thai was really vegan and the owner kindly gave me a really thorough breakdown of all the ingredients and it is indeed safe for vegans by default--no special requests necessary. Check it out, it's terrific.
