Very informal vegetarian noodle place just off of the main intersection leading into Old Town. Likely to just be a breakfast/morning operation. Street sign reads An Chay, Mi Chay, Vegetarian Noodles. Located up the steps, behind a street vendor selling animal-based products and tea. Likely morning only.

Delicious street food noodles - Edit
Hidden gem of street food stall in hoi an. Only sell local noodle like my Guang and noodle soup. It’s located inside the pagoda.

Tasty noodles - Edit
This place is across the parking lot by the the pond, next to the gate of the big pagoda, so its a bit hidden. Tasty noodles (only my Quang and “bun”,served by friendly ladies. Their my Quang is one of the best in Hoian, much tastier than in other famous restaurant. Most of ingredients are made by themselves, including non preservative seitan/ham, they also don’t use MSG which is worth to support. Make sure to come before 9.00 before all food sold out.

Lovely veg noodle place for the morning - Edit
15K for Mi Chay - noodles, some fake meat and the old watercress and greens. Lovely little community feeling but really central. Not sure on the hours - wasn't open in the evening so probably just a morning place.
