Fantastic broth - Edit
You can tell that the chef puts his heart into his cooking. The broth is made from stewing vegetables for many hours. I tried the Hokkaido white sauce ramen, which is made with vegan butter. It’s graced with cabbage, lettuce, corn, vegan ham, scallions, nori, and a fresh shiitake mushroom. The ramen noodles are on the thicker, chewy side, which isn’t my favorite, but it’s likely handmade. The flavor was rich and satisfying. I also got a side of handmade smoked chick’n, which is a smoky, dense tofu served with shredded ginger and soy sauce paste.
