A nice eatery - Edit
I was kind of skeptical about cheap veggies eateries in central and southern Vietnam since they use lots of fake meat. This one does but they also have other food that is tasty. My most favourite was banh xeo - hot, made in order and real. The pancake fillings were mushroom and bean sprouts. Super cheap for one dish of 3 pancakes - only 20K. Other cakes are banh bot loc (tapioca cake), banh goi (wrapped cake) and banh nam ( a kind of rice cake) - lovely too. The noodle dish was a bit on the sweet side for me. Not sure if the staff can speak English but this one should be on your list.

Randomly found this place while searching for a simple "com chay" stand. Great stuff, it was busy as all get out around 6:30pm, very cool. They let us make our plate and of course we went overboard so at the end of it we paid 40k per person because our plates were stacked high. Essentially it's 20k a plate (maybe just point to the things you like and have them plate it). Still at the end of the day this was by far one of the best deals we have found in Vietnam.
