Travel through Thailand via these classic styles of noodles

When I said I like spicy, the chef/owner suggested the Southern Style (Chai-ya) Pad Thai prepared Jay style—which at The Pad Thai Stand means withholding egg and using the Ayutthaya sauce (soy, dates, and cranberry) instead of the fish sauce. The south end of Thailand reaches the temperate zone where coconut groves are lush and sweat-inducing spicy foods are plentiful—both of which are reflected in this dish. The rice noodles are tempered with a touch of crushed peanuts and aromatic shallots then finished with American broccoli, cabbage, and raw bean sprouts. While I wouldn’t consider this spicy, the tickle of heat was present at the end of every subtle bite.

Pros: Any Pad Thai Can be made vegan

Cons: No Tofu
