Vegan And Organic International Cuisine - Edit
We may not be able to travel due to COVID-19, but we can still enjoy the flavours of the world thanks to The Breakfast Club! Inspired by their adventures road-tripping across the globe in a caravan, The Breakfast Club has launched a travel-inspired menu for their vegan meal delivery and subscription service. Apart from farming and sourcing organic ingredients, they have been doing lots of R&D to ensure that their handcrafted dishes are tasty yet toxic-free.
Read moreI tried the Vegan Yakisoba, which is now available allium-free! This healthy version of the popular Japanese street food consisted of stir-fried chewy ee noodles alongside tofu, mushrooms, and shredded cabbage. The noodles were topped with seaweed flakes and pickled ginger naturally coloured using pink dragonfruit, then generously doused in homemade yakisoba sauce and mayonnaise. Unlike the usual Kewpie mayonnaise which relies heavily on eggs and MSG, The Breakfast Club has crafted their own mayonnaise using protein-rich cashews, tofu, shiitake mushroom extract, and mustard. The in-house mayonnaise was surprisingly creamy and rich, making this dish savoury and indulgent without feeling heavy or greasy!
I also tried the Korean Flavour Rice Bowl. The organic brown rice was served with marinated firm tofu, braised soft mushrooms, as well as assorted colourful vegetables such as beansprouts, carrots, and cucumber. The key to a good bibimbap is the gochujang sauce, and The Breakfast Club has created their own chilli soybean paste with no preservatives. The in-house gochujang had the right levels of spiciness, saltiness, and sweetness, which gave the rice bowl a delicious flavour when all the ingredients were mixed together. I also liked the homemade cabbage kimchi as it was crunchy, tangy, and packed with gut-friendly probiotics. (P.S. A recent study has found that COVID-19 mortality rates are lower in countries where diets are rich in fermented vegetables!)
I previously chatted with the owner of The Breakfast Club and was greatly inspired by her passion for health and environmental sustainability. Although the meals are on the pricy side, I think they are justified by the use of organic ingredients and eco-friendly packaging, not to mention the amount of effort in developing new recipes and preparing these home-cooked meals.
