Weak AF tofu - Edit
Tofu scramble is veggies sautéed with completely unseasoned porcelain tofu. Basically microwaved steamed veggies in a bag with crumbled white tofu mixed in. Disappointing, because I’m not eating at Walmart.

I had the vegan burrito and fruit. Burrito was EXTREMELY bland. Not even salt/pepper on the tofu. Happy they are trying new things but a little seasoning would go a LONG way!

Quirky diner! Menu offers a vegan burrito and tofu scramble. I ordered the burrito - which came with tofu or vegan patty. The patty was not available. The burrito was very bland with unseasoned tofu and a few vegetables - no rice/beans. The side of chips and salsa were good. They have almond milk for drinks. The staff were not overly friendly & service was mediocre.

Vegan options in a vegan desert - Edit
It's really hard to find any vegan options in Fredericksburg, so I was happily surprised to find two fully vegan options on the menu when my family visited Texas Sunrise a week ago. They now have a vegan burrito (fairly good) and the vegan tofu scramble (not very good). My husband had the burrito and said he would order it again. In the burrito, they use a vegan breakfast patty made of black beans and rice, according to our waitress. It was also filled with mushrooms, avocado, and peppers. I tasted it and thought it was just okay. It was served with a beautiful side of fresh fruit, though, and that was fantastic. I ordered the tofu scrambles, and there seemed to be no seasoning at all. The tofu was served in chunks with steamed or lightly sauteed vegetables (I just remember broccoli, zucchini, and spinach). It was served with salsa and 3 corn tortillas, so after salting the scrambles, I made breakfast tacos. The salsa helped, but I wouldn't order this dish again. At least we know there are some breakfast options in town when people come to visit, but vegan breakfast at our house is way better!

Read moreI ordered the Vegan Scamble for breakfast. I didn't realize I'd get a plate full of steamed broccoli, onions and spinach with just a few tofu bits to call it a scramble.
Zero seasoning was used so I had to depend on the condiments table side.
Nice try, but it fell short.
Might be just what the Dr. ordered though if you are following the esselstyn diet.

Menu is clearly marked if it's GF and can be veganized. Menu welcomes those with dietary needs, and staff was very knowledgeable. A must stop if you're in town!

Overall pleasantly surprised. There were 2-3 fully vegan dishes on the menu. Everything else on the menu allowed for vegan subs.

The vegan patty thats meant to replace breakfast protein choices is a frozen burger patty.
The "breakfast burrito" that my boyfriend got was just vegetables wrapped in a tortilla. No sauce, no spices, just vegetables in a tortilla.
The only thing that was decent were the pancakes. Not worth the price at all if you are vegan.
