Vegan options available and other dishes can be adapted - Edit
After 3 flights totally 22 hours I was really glad that the cafe in the Doubletree Hilton offered Vegan options. The next closest food is Yas Mall. You just have to ask the cafe what they can make Vegan. They are very adaptable.
