There were a few pastry options. Oat milk is used for all drinks (unless another is requested) so that’s nice.

Oat milk default FTW - Edit
Not only does Stumptown use oat milk as the default base for all their coffees, they do so at no extra charge (take that, Starf*cks!). I also had the vegan breakfast sandwich which was very yummy, indeed. I 100% recommend this place.

Harvey Oat Milk - Edit
I ordered a vegan breakfast sandwich, which includes an Impossible sausage patty, tomato jam, arugula pesto, and "mozzarella." There was too much arugula (and no pesto or cheese), but it was still pretty good. My partner ordered a drink in an Okapi glass to-go. I appreciate they offer this service, but none of the employees really knew how to use it.
