Proceeds go to Gyudmed Tantric University, one of the South Indian Tibetan monasteries that now have a vegetarian 'policy'. The food, of course, does service to the philosophy. Even though there are several egg dishes (including the 'special' versions of some), one sticker promotes 'Tibetan tofu' and veganism. What I tried was original, unlike the thukpas, etc., I had previously tasted, and low in salt for the surrounding Indian standards.
