Does not get better than this - Edit
Heavily influenced by the many reviews and photos, went to pick up some pastry and bread. This is really the best (and refined) vegan pastry I have tried in Santiago. The bread is delicious too.

All sweets are vegan and amazing! - Edit
The new location is very nice and spacious. They have more products and much more sweets in particular. All breads, focaccia and ALL sweets are vegan. They have viennoiseries as well as small cakes (which can be ordered in larger sizes, with a few days anticipations). We had one with a pear cooked in wine and it was A M A Z I N G!! One of the best vegan dessert I ever had in Chile.

Best bakery in town - Edit
I would say this is the best place to buy bread in town. I think they’ve mastered their technique to a point where everything they bake is flawless. Even not being fully vegan, Pan Semilla has a lot of vegan preparations. The vast majority of breads are vegan plus all their pastries and desserts. There’s a couple cakes and sweets to die for! I really like the vegan berlines (not fried, baked… geniuses!) the snicker and the pear cake. There’s a lot of whole grain options. You can also buy some vegan and vegetarian products such as dips, snacks, chips, etc. Last but not least, they deliver the loaves in paper and cardboard boxes and the store has a very elegant yet chilled design.

Este lugar es definitivamente un must go, venden muchísimos productos veganos y vegetarianos. Recomiendo a ojos cerrados todos los panes y los cinnamon rolls.
