Vegan Teriyaki - Edit
This is a very nice find in Oaxaca. They have vegan options. Just made sure you indicate that you are totally vegan. I had vegan veggie rolls and delicious Vegan Teriyaki which came with rice.

What a great surprise this place was. The veggie ramen is the best I’ve ever had. The veggie roll was fresh, but a little heavy on the rice.

Simple and sweet - Edit
We were having trouble finding a veggie suitable restaurant because either places were closed or filled up. Walking by this place we dropped in and asked if the soup broths were veggie. The waitress, who I think is also the owner and cook helper, was very kind and answered all our questions. We ordered and the food came quick, and we enjoyed it. There was an older Japanese woman, grandma I believe, who gave my kids origami paper cranes. The vibe was sweet.
