Serves meat, vegan options available. Mexican food restaurant chain where the menu is seafood and non-veg focused but has grilled veggies as an option for meal topping or filling. Look to the vegetarian section on the menu. For example, you could order veggie tacos, mango avocado salad, California bowl, balsamic & roasted veggie salad, quinoa bowl, and burrito especial all without meat and request to add grilled veggies. Be sure to specify no cheese, cream, or white sauce. Open Mon-Thu 10:30am-9:00pm, Fri-Sat 10:30am-9:30pm, Sun 11:00am-9:00pm.

Don't Go Here!

Horrible! It took 20 minutes to get an order for a burrito and there was no one there and no mobile orders with 6 people in back fooling around, playing around. It was supposed to be grilled veggies. I am vegan and took one bite and the taste of shrimp was overwhelming. I took it in and asked. The front clerk lied and said they cook veggies on a different grill and there was no seafood in my burrito. I threw it away, it cost me $13. Go some place else this place is a big zero!

Not bad for a chain restaurant

Stopped by Rubio's after an afternoon bicycle ride and sampled their menu. My burrito especial with grilled veggies (grilled veggies with guacamole, citrus rice, black beans, lettuce, roasted chipotle salsa, salsa fresca and chipotle sauce; wrapped in a toasted flour tortilla and served with a side of tortilla chips) was very tasty, although the tortilla, chips and chipotle sauce obviously upped the calorie count. The cilantro lime quinoa bowl (brown rice & quinoa, romaine lettuce, grilled veggies, avocado slices, black beans, toasted almonds and Cilantro Lime Mojo Sauce) was better in that the sauce was served on the side. Prices were reasonable for the volume of food served. Definitely worth returning to try the other vegan-ized entrees - California bowl, balsamic and grilled veggie salad, or the chipotle orange salad.
UPDATE 3/8/2020: we no longer stop by this particular restaurant, as they have cut back their portion sizes, and as a result, their food is notably overpriced. Other Rubio's locations seem to be okay - the one in Gold River and the one in Chatsworth come to mind.

Cons: Outside seating is next to the parking lot, Rather small portions for the price
