Would've gotten 5 stars if vegan option was just offered on menu

We made a reservation a week beforehand and wrote we were 3 vegan, 2 vegetarian and one carnivore. The day itself we got a phone call from the restaurant asking if we were strictly vegan and what we would eat (we told them we did not know yet). This was not very confidence inspiring for us...

However, when we arrived, they told us to have a look and discuss what we would like (5-dish menu or a la carte). Unfortunately, they only have one dish (a starter) on the a la carte that is vegetarian, so we asked for the menu (they could make something a la carte vegan on demand if that was necessary).
Instead of asking 3 vegan, 2 vegetarian and one with animal, we asked for 5 vegan and one with animal to make it easier for the kitchen.
We enjoyed the menu a lot, it was a great experience. After every dish we said to the personnel they had to include this on their menu so more people could enjoy it. It had very good combinations of tastes and we never had the idea they didn't do this often. This is by far the best vegan experience in the wide area of Hoogstraten, you would have to go to Turnhout (eg Koeiketel) or Antwerp (eg Camionette) to eat as good as we did here!

Pros: Very nice combinations of taste, They were clearly not afraid of vegan options, They also had vegan dessert

Cons: WHY DON'T THEY PUT THIS ON THE MENU
