It's always hard to find vegan food out of the big cities in Spain/Portugal and often have to rely on conversing with waiters.
In this case, the waiter was great, and recommended 3 options for vegans that are not on their menu.
- A basic salad of tomato, lettuce and onion with vinegar.
- Fried potato slices like chips.
- An authentic tomato rice dish (arroz de tomate) which was delicious.
