While waiting in that epic line, one of the staff members David came around to give us the spiel of this epic ramen from Shinjuku. It all sounded good but then I asked if there was a way to veganize the vegetarian ramen. Unfortunately, their delicious sounding cauliflower-puree base relies on a dairy-based creamer.
As I pondered for a few seconds, David laid it out and told me they actually do a vegan style dry ramen that uses the Red King chili/cayenne pepper base which thick noodles, and makes it into a 'dan dan' noodle style dish. My eyes gleamed and thought YES!!!! Even though it would be soup-less, I was willing to try and see how it turns out.
Their Vegan Ramen (which btw is a legit item because our receipt printed it as such) incorporates the potato 'chashu,' stir-fried spinach, shiitake mushrooms, and green onions of the vegetarian ramen on top of the Red King chili oil.
This ramen was legit! The thick noodles (which are Japanese wheat noodles and not egg) were amazing and coated with the chili oil, it was unbeatable. The veggies and green onions on top added incredible flavors to the dish, with the potato pancakes being a huge standout.
The big question is: why is the vegan ramen not advertised?! It is so worth the try!
What I recommend for Ramen Nagi to do is explore using a non-dairy creamer to make their cauliflower-puree tare to completely veganize the vegetarian ramen to make it more accessible to the masses. I will gladly return and recommend this spot to others who didn't originally think there is an option for them here unless they consumed meat.
