Possibly best vegetarian option in town - Edit
Qdoba is a chain restaurant where food in made directly in front of you following your specifications. I love to support local places but Qdoba definitely has a great niche here as the only place in town with a wide variety (or at least number of combos) of vegetarian options. (Most places offer only a handful).
