Finding this place was easy, but the environment is really hard to bear especially if you are vegan. It's a meat market with lots of butcher shops, fish markets, and cheese shops. It smells like a meat market too.

The menu is written in chalk and everything is sustainable as far as take away containers and even the napkins. I really appreciate that.
There are no tables, but there is counter service. So I decided to eat there. I got the lentil soup, the 3 sisters soup, the hummus and pita and the grape juice.
Everything tasted homemade and really good. The lentil soup was my favorite but I love lentil soup in general. It's my favorite soup. The 3 sisters soup was also really flavorful and filling. I only got a half portion of that because I was already eating so much food. The hummus was very creamy and it was a large amount and the pita was a great way to get the hummus into my mouth. The grape juice was in a glass bottle and is a good portion. It wasn't too sweet and had a nice tartness.
Overall I would recommend this place for food, but it might be better to take away to eat away from the surrounding animal products.
The person who served me at the booth was very friendly and spoke English. It was a really nice visit.

I'm not exagerating when I say I counted 11 such places while waiting, and that's without even walking around the stall trying to spy more!
If you don't mind eating/waiting surrounded by such things, go right ahead, but personally, I'm not a fan.

Vegan stall in an indoor market ! - Edit
It is actually a stall inside the market Mercado Santa María de la Cabeza. I got the Gazpacho which was the best I ever eaten. You can actually taste the fresh and qualitative vegetables. And also got a stew with chickpeas that was delicious too. The owner was very friendly and could speak good English. I especially liked the fact that it was around locals and not in a touristy area. You could feel that the real life of Madrid citizens was happening here !

Owner/chef was super friendly and explained the menu to us in English. We got two takeaways plus two dips and bread for our train trip. Both were freshly made and very yummy! They came in biodegradable packaging and were a generous size and affordable. There were also stools where you could eat at the bar if you wanted. Overall we had a really great experience!! Only thing I could recommend is to maybe have a menu in English and other languages.
