Wide variety...all delicious! - Edit
There is a clearly labeled vegan section on the menu in addition to other menu items in other sections, which are also labeled vegan. The fast, casual concept does not deter from the quality of the food and the atmosphere is nice and the staff and friendly/helpful. The food...especially the mapo tofu...is delicious!

Peter Chang Knows his way around an eggplant - Edit
Peter Chang has a growing number of restaurants in the metro area, and very much a sister restaurant to NiHao just a couple miles South. But, this is very much its own version, the foods is very similar to fancier NiHao, but on Ashland is counter-based, quick service. The food came out in under 5 minutes, it would be great for lunch, but still has alcohol and many drink options to have a casual and tasty dinner. The vegan options are well marked, in a section or labeled as vegan scattered through the menu with an additional few more that can be vegan if you ask (the dumplings and gyoza are what I learned about). They're all very tasty, but the eggplant is always a star, whether NiHao or Peter Chang, it's creamy on the inside, crispy on the outside, and spiced perfectly.
