best vegan Mexican food I've had - Edit
Wow. We had the street tacos and the green enchiladas. Tried the Azada, mushroom, "chick-end" and nopales fillings. We're here for lunch and thinking of coming back for supper- it's that good.

My husband and I ate here on our last evening in Las Vegas. There are lots of options and all vegan! I got the potato tacos and my husband got a burrito with mushrooms. Both were tasty and his was enough for 2 or 3 people! Only negative was very few beverage options, no diet and the water was bottled.

Read moreThe nachos were meh, because the daiya cheese on them was not fully melted. If I had time I could have asked them to melt the cheese. It wasn't bad, I ate it all :-)

Was in Vegas for a night and we were excited to find a vegan Mexican place pretty close to our hotel. We live down in Phoenix and vegan mex options are hard to come by there, and would rather not have to go through the 'can you modify this five ways to make it vegan' conversation, and then still risk it have animal product. So, based on the reviews we thought this place would be great.
Read moreStaff were nice - one explained the menu and what they use (though a lot of it store bought - Daiya and Follow your Heart for cheeses. They said they make their own Asada, but was basically just seitan). They were out of quite a few things and they showed us a list of those items - luckily nothing we were planning to get.
We got one asada taco, one chicken posole, and the rolled fried potato taco plate. The posole and taco were okay, the potato taco plate bland. The plate had dirty rice and beans. One of the biggest components of Mexican cooking (IMO) is the seasoning, and there was basically none in any of what we got (rice and beans included). Had to douse everything in salsa (which were good - red and green) to get any flavor.
Portions are tiny compared to standard Mexican places. Before going veg I had a couple I frequented. When they brought over our trays my first comment was, 'we're going to need more food'.
$22 for what we had plus two drinks, considering the quantity, seemed overpriced.
I know they're trying to fill a void in our community for vegan Mexican, and were really nice, so kudos for that.
There is another Mexican place literally next door that said 'vegan options' on their window, and another across the street that said vegetarian Mexican - so I'd probably look at those places first if we're back in LV. Updated from previous review on 2017-05-07

More and more Mexican vegan places are popping up but it still feels like there are not enough. So I was excited to try Pancho's. I got the al pastor taco and the chorizo scramble breakfast burrito. Everything was fresh, tasty, and the fake meats were excellent. They are seasoned and are not greasy. Plenty of seating and friendly service.

We stopped in for lunch with two other friends while we were in town. The menus are at the table and you order at the counter. The prices are reasonable and there's plenty of options to choose from, both separately and combo plates. Our friends each got the 3 taco plate with different vegan meats (asada, chorizo and al pastor). They also offer chicken, mushrooms and cactus as meats. Dirk got a burrito made as a bowl instead upon his request and I got the mole enchiladas plate. Everyone thought it was good. The service was friendly too.

We ordered Wet burrito (was strange, really wet - difficult to eat it, floating in the liquid salsa), Soup Posole (was tasteless) and Strawberry Cake (ran out of it, instead offered us a Vanilla cake, which was on dry side). Their tacos are great.

Open until 8:00pm. Walked in at 7:00 and was greeted warmly and asked if we'd been there before and then he explained to us how to order. (order and pay at the counter, sit down and he'll bring it out) The menu looked overwhelmingly good and it was so hard to choose what to get! The 3 street tacos (asada) with beans and rice was a good amount of food for a fair price and tasted delicious. Next time we'll skip on the horchata - watery and grainy. Service was quick and very kind - would go again
