Pretty Good Tex-Mex - Edit
The restaurant setup, ordering process, and overall concept is very similar to Chipotle, but certain ingredients like the rice and salsas have a different flavor profile. I ordered a Bowl and loaded it with everything vegan. It was good, and I would not hesitate to eat here again. But if there was a Chipotle nearby I might go there instead. That is probably just my own personal preference.
Read moreIt's a good idea to check out the Allergen Menu before visiting to find out what is vegan. There is a link to the Allergen Menu front and center on the Pancheros website home page. Basically, everything is vegan EXCEPT for the tortillas, vinaigrette, and the obvious things like meats, shrimp & dairy. All of the salsas in the ordering line are vegan. The hot sauces, which are in BOTTLES by the drink station, are NOT vegan.

Not always fresh - Edit
This place typically has great tofusada but it was old, dried up and flavorless when I went. Just make sure you get fresh tofusada when you go. Also, ALWAYS watch the spicy salsa because it’s next to the sour cream, which always ends up in the salsa bowl. Just ask and they’ll get you a fresh, dairy-tainted-free batch of salsa.
