They have a number of vegan and gluten free options however you have to specify that when you order. The ramen comes with rice noodles but they have vegan friendly ramen noodles for no extra cost. They also have 4 flavors of vegan soft serve ice cream.

Amazing ramen - Edit
I had the curry with fried Japanese squash and the shroom out bowl- amazing flavor. Also has vegan soft serve that never disappoints, and you can get it in a boozy float. I love nudo house!

Ok but poor eco friendly-wise - Edit
There was some vegan options. Creamy miso was ok. Veggie spring rolls are a waste of money and space. They’re just shredded iceberg. They give way too sauce with them too. And all the cups and cutlery are plastic disposable. I asked about that and they assured me it is all reusable and washable and microwave safe 😑.

Ramen and other delights - Edit
Nudo just opened a 2nd location, this one in the popular “The Loop” neighborhood. Nice indoor seating, and I am hoping next spring they’ll add some outdoor seating. Their food is delicious, their vegan and gluten free options are clearly labeled on their menu, and the owner and staff are very friendly. Please take note that the V on their menu means items can be made vegan, not that they are vegan by default, so be sure to specify when you order. This particular eve my partner and I shared the kimchi (no fish sauce!!!), the Nudo salad (lotus root based), spring rolls, the curry ramen which was AMAZING, and the pineapple black vinegar vegan soft serve. I love that they always have a vegan soft serve option, and their flavors are often very unique. This is definitely a crowd pleaser if you’re dining with vegans or omnis who love ramen.
