I've only been once while visiting Hudson. I had a vegan spinach and wild mushroom chimichanga from the weekly specials menu. My sister ordered grilled veggie tacos. Both meals were good. I preferred the flavor of the black beans over the pintos. We ordered chips and salsa, which do not come automatically, and I enjoyed the green salsa while I found the red to be bland. (But I grew up in Texas and have certain expectations about salsa.) Overall I would eat here again.

updated menu with vegan symbol - Edit
Mexican Radio appears to have updated its menu, adding a new symbol next to some items to indicate that a vegan version is available. Before, they used a symbol to indicate "veggie/vegan friendly." The change was somewhat helpful to me as a near-vegan. By the way, in my opinion, this has been a great Mexican place all along.

They have very good vegan and vegetarian options. You can have vegan fajitas or tacos and so much more. They offer seitan, tofu, vegan cheese and vegan soy creme. The environment is noisy as hall, but the food is pretty good.
