THIS is how you do a competent vegan dish! - Edit
It's so often frustrating to find restaurants where the vegan option is at best mediocre or there's no such option at all when it could be so easy. The couscous and the roasted vegetables were solid, the seitan nice - voila, you have something for vegans on your menu that's honestly not a lot of effort!
