got medicinal vegetable hot pot - Edit
The flavor was something I've never had before and I really enjoyed the unique flavor and all the vegetables.
Read moreI don't speak Chinese but communicated with the staff lady by showing the characters for vegan on my phone and she was able to recommend several options.
Unfortunately the airport seating seemed less than clean, although a cleaner was working- as I finished my meal a baby cockroach crawled across the table, which tells me they have an active infestation. I pretty much lost my appetite. I don't think that's the fault of the restaurant at all though as it's shared seating with a lot of other restaurants in a food court.
Pros: unique flavors, helpful staff

only two dishes for vegans - Edit
Were told there were only two vegan options, both hot pot with rice. Not sure if she was telling the truth or just trying to push us to buy the more expensive dishes. We tried both. Taste was ok, not marvelous, not terrible, don’t remember the price but remember feeling it was rather expensive. Airport price maybe? Served with hot Chinese tea which I appreciated. Were told that the tomato noodles and some other dishes contained milk. Good to have an option if you are at the airport and famished. But better eat elsewhere if you have the time.

I was impressed. Had the tomato noodle dish and it was very tasty. (And about us$5). I would absolutely go back. Every time I have to fly through Taipei airport, I will eat here.

I had a delicious corean speciality with kimchi.

Good Airport Option - Edit
Li Pin serves typical Taiwanese soups and hotpots. Ingredients with egg and dairy seem fairly well labelled, but it's probably best to say that you don't want egg or milk or fake meat (which isn't usually vegan). If you have time before a flight or if you arrive hungry it is worth the trip to Terminal 1 to find it. It won't be your best meal in Taiwan, but it's better than I've found at any other airport in Asia.
