Good Omni & Herbie Options - quality & staffing could be improved

Fairly new management & chef making a big effort to stand out in Pembrokeshire for those with dietary needs, but some improvements needed over time.
It is nice to see a few different options offered for veggies & vegans that's not just your typical veggie burger or chilli, like most other local establishments.
The salad bar also had mostly vegan options with the slaw being made with vegan mayo.
We were a large group who dined mid-week having pre-booked, but unfortunately the front of house team member (there was only one this day) didn't have any knowledge of the menu or the bar. They also took our starter order and left, and then came back to take the mains order whilst we ate the starters. They were also not seen very often so it was difficult to order drinks.
As for the quality of the meals, all the group had the same comment, whether it was regarding their meat, fish, or tofu - the dishes were dry. Seasoned, but dried out. The salad bar is a nice touch, with some chutneys, but if the dishes are being served with just a plain protein & carb (no side salad, vegetables etc), it could do with a cooked sauce option or even sauces & oils available at the salad bar (not to make a comparison to nandos, but like nandos 😂).
I have heard great things about the Sunday roast here, so I would like to return to try this one day. However the rest of the weeks service does need some improvements which I hope will come with time.
