Staff can make adjustments to some dishes not labeled as vegan (such as swapping for vegan cheese). Vegan selection includes spinach tagliatelle with seitan, noodles or rice with tofu or seitan, gazpacho, Cajun sweet potatoes, poke bowls, red cabbage salad, vegan cheesecake and occasionally vegan choices in the specials menu. Note that the bread bun of the veggie burger is not vegan. Has rice and vegetables or spaghetti (ask to swap for vegan cheese) in the kids menu, plus various sides. Enough options for us to eat there every night for a week! - Edit
We had a week long stay at the hotel with non-vegan family members, and were half board. There were enough tasty vegan options on the menu that it didn't feel repetitive, and the vegan cheesecake was just delicious! They had an even wider range of veggie dishes, and were able to adjust some to make them vegan.
