Excellent food, solid staff, maybe hustling tourists a bit - Edit
The food was delicious and this was an amazing first meal upon arriving in Madrid. I had the vegetable paella and gazpacho and loved both. Only weird thing was the waitress clocked me for an American and told me “el servicio no es incluye,” clearly requesting a tip in a country where, as I understand it, tips are fairly rare in this situation. She did a great job so I tossed her an extra €10, but you may wanna watch out.

Ask for vegetable stock - Edit
Visited this place last year, so I don’t remember enough to comment on the quality, but I just remembered I had to ask them to use vegetable stock (caldo de verduras) because they said their default is to use chicken stock.

Fue lo mejor poder haber encontrado una paella tradicional vegana, lo malo es que la paella es para varias personas así que puede ser mucho. Los precios son elevados pero esta bien para ir una vez.

Note- you have to order two portions of each type of paella you order, so unless you are traveling with another vegan, skip this place.
Read moreI ordered the vegan paella and it was disappointing. Bland with overcooked vegetables, plus it was quite expensive. I won’t give it one star just cause we had friendly service.

Is it the best veggie paella in the world? No. Could the staff have been a bit more happy to have customers? Yes. But your stomach won't leave unhappy - nor will you be contemplating more food afterward.
