Only one option, but it's something! - Edit
After roaming the west coast of Orkney desperately looking for lunch, we stopped in Stromness and checked everywhere we could. Eventually a local pointed us here, guessing that they might have something- and they do, a Hummus and Red Pepper bun. They have a fridge with pre-made sandwiches, but they make them up if there isn't one there. They're well filled, taste good, and do the job. I can't confirm if they ever have any other bakes or snacks that are vegan though, but it's just the one roll available currently.
