Menu changed: no vegan options at all - Edit
The menu has changed: now the restaurant serves mostly soups and one bibimbap. I ordered the bibimbap (which traditionally has beef and eggs inside) but without meat nor eggs. The bibimbap was good but there is absolutely no other vegan options. All the side dishes contains fish or meat.

The original location of the Hyundaiok (현대욱) restaurant is in the labyrinth of Jeonju’s Nambu Market, and has been running since 1979. The original store, open daily between 6am and 2pm, helps customers get over their hangovers by eating of one of their two soups. However, in 2008, the first owner stepped down and chose her favorite regular customer to take over the operations. With a mind for business and a desire to share the famous soup with everyone, the current owner, Mr. Oh, decided to franchise the shop. Located in one of Jeonju’s central neighborhoods, the flagship store for the franchise operations is an impressive two-story restaurant. At this location of Hyundaiok you can enjoy an expanded menu or indulge in the original recipes in a more comfortable atmosphere.

Utilizing “food-tech” meat substitutes, you can order Soy-meat Bulgogi (kongbulgogi, 콩불고기, 9,000won), Soybean Sprout Rice Bowl (Hyundaiok Kongnamul Bap, 현대욱콩나물밥, 9,000won), or the Korean Thistle Bibimbap (Gondeure Bap, 곤드레밥, 9,000won). The bulgogi is a large serving and can be eaten with the self-serve rice and soybean sprouts available at the counter. Other side dishes, such as cabbage kimchi, perilla leaf kimchi, fish paste, salted shrimp, and kaduggi should be avoided since they contain fish products. However, the small sweet soybeans, roasted seaweed and sesame oil are all safe for vegans and can be enjoyed alongside the main vegan dishes. The Soybean Sprout Rice Bowl features the restaurant’s signature soybean sprouts as well as pieces of soy-meat bulgogi. Consider adding a few spoonfuls of the vegan seasoning sauce (yangnyeom jang, 양념장) to your bowl which adds a spicy, salty flavor. If it becomes too salty, have a spoonful of the cold soybean sprout soup which is served with the rice bowls: don’t worry, it’s not the same stock used in the other soups and it is vegan.
My personal favorite is the Soybean Sprout Rice Bowl which is a hearty meal with plenty of rice, soy meat, and dried veggies. My non-vegan friends are always shocked by how delicious it tastes! I highly suggest it. Whenever I'm in Jeonju late at night or early morning, I enjoy eating here.
